Over the last few weeks I’ve tried to make at least one slow cooker meal. Usually I’ll prepare the slow cooker the following morning so that I can come home to a ready-to-eat meal.
This slow cooker whole chicken dinner is such an easy recipe. You can use whatever extra vegetables you have in the fridge, or buy more traditional ingredients. I prefer to use the slow cooker to make a complete one-pot meal. For the chicken I’ll add a couple of vegetables and sometimes potatoes.
Carrots and celery are great choice for the slow cooker. They’re both aromatics and will add more flavour to the chicken. They’re more solid vegetables and will cook perfectly – not too soft or mushy. If you you’re trying to lose a lot of weight you can omit the potatoes and add another vegetable, or more carrots.
You will most likely never experience a more moist and tender chicken as one cooked in a slow cooker. The combination of very slow cooking at a lower temperature, and a sealed pot to keep in all the moisture, make for a succulent meal.
Have fun with different flavour combinations. A more traditional mixture of spices may include thyme, rosemary, sage, salt and pepper. I used a medium hot yellow pepper with the seeds removed and hardly noticed the heat. Cumin goes well with chicken as does Spanish Paprika, and in the case of this recipe, chili powder and turmeric.
Don’t alarmed by the number of steps in my recipe below. For this post I tried to include an image for every single step, but it shouldn’t take you much more than 10 minutes to prepare this meal.
When the chicken is cooked turn off the slow cooker and carefully remove the lid so that you don’t get burnt by the escaping steam. Remove the chicken from the pot and let cool for 5-10 minutes. Cut off the breast meat, which should fall right off the bone. I like to serve the two of us the breast meat with two large ladle-fulls of vegetable. After dinner I’ll remove the remaining chicken by hand from the carcass. Store the chicken in one container and the vegetables and juice in another.
A 3.5 to 4 pound whole chicken easily feeds four people. You can also serve the chicken on a platter surrounded by the vegetable and let your family dig in!

Slow Cooker Whole Chicken
You will probably never experience such a moist and tender chicken as one that is cooked in the slow cooker.
Remove the core from the celery bunch and cut off about ½" from the top of the celery stalks. Wash well.
Chop the celery stalks similar in size to the carrots.
Cut the ends off one yellow onion and gently press down on two cloves of garlic to more easily release the skin.
Loosely chop the onion and garlic.
Wash the hot yellow pepper.
Slice the pepper in half and remove the seeds and the inner flesh if you don't want your meal to be too hot!
Wash the lemon and apple. Cut the lemon into eighths. Cut the apple into quarters and remove the core. Cut each quarter in half.
Wash the potatoes in a large colander. Use a vegetable scrub brush if needed.
Cut the potatoes in half.
Add all of the prepared ingredients above to the slow cooker crock pot. Also add the salt and sage. Mix well.
Remove the whole chicken from the store packaging. Lay it breast side down and liberally coat the bottom with freshly ground pepper, chili power, and turmeric.
Lay the chicken on its side on top of the vegetables in the crock pot. Coat each side with the chili and turneric.
Lay the chicken on top of the vegetables, breast side up, and coat with the spices. If needed, used your hands to make a well so that the chicken will lay a bit lower inside the pot. I placed the apple slices and lemon wedges around the chicken, but you can also mix them in with the vegetables.
Set the slow cooker to low for 10-12 hours. When the slow cooker is done carefully remove the chicken onto a cutting board. Use a couple of large spoons or whatever utensils you have.
How to serve: you could serve the chicken on a platter, surrounded by the vegetables, or remove the meat from the bone and serve it on individual plates.
